Its flexible bypass piping construction attaches the bisquette burner to the exterior of the smoking box, allowing foods to cold smoke without overheating.
While hot-smoked foods utilize both high heat and smoke to infuse that familiar savoury spiciness, cold smoking requires minimal heat, instead relying upon the smoke to cure the meat or cheese.
